Spinach Banana Muffins Recipe

  • 2 cups Oats Flakes
  • 1/4 cups Ground Flaxseed
  • 2 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/2 tsp Salt
  • 1 tsp Ground Cinnamon
  • 1/2 cup Coconut Sugar
  • 1/2 cup Almond Milk
  • 2 cups Chopped Spinach Leaves
  • 1/4 cups Coconut Oil
  • 2 large Peleed and Chopped Bananas PELEED AND CHOPPED
  • 2 Eggs
  • 1 Vanilla


  • Preheat the oven to 375°F and grease a muffintin of the size of your preference.
  • Add 2 cups of oats flakes to the blender andblend until you get a fine flour without very harsh lumps. Reserve in aseparate bowl.
  • Add the rest of the dry ingredients to the bowlwith the oat flour: the baking powder, baking soda, salt, cinnamon, flaxseedand sugar. Mix and reserve.
  • Pour the almond milk little by little into theblender, and then 2 cups of spinach. Blend until you get a liquid andhomogeneous mixture.
  • While beating, add the banana pieces one by one.Once all are blended, add the coconut oil and mix until obtaining a smooth andhomogeneous texture.
  • Continue blending and add the vanilla and eggs.Pour the liquids into the bowl with the flour and mix until everything isintegrated.
  • Take the mixture to the muffin tin, and bake for25 minutes or until golden brown and fluffy. You can make sure by inserting atoothpick and if it comes out completely dry, they are ready. Hope you like theflavor, enjoy!
